THE EXPERIENCE

Life is movement. Nothing is static or absolute. No one is. We are in a state of constant flux, just like the Earth, the tides, bacteria, light, the blood in our bodies, colors, seeds. Like family trees, cuisines are constantly being redefined, their identities enriched by an intense intercultural exchange which has formed the basis of all civilization ever since humans shared their first sounds, products, ideas, and customs.

MEET OUR EXPERIENCES

The fireplace is where bloodlines merge, where people come to sing, individual and group histories are forged, life gestates. The fireplace is where dialogue is fostered, the elements meet, opposites attract. Thus was born our cuisine: from a complex history called Peru; and another, equally complex, far-off and foreign history called Japan that merged to live in harmony and create the third reality.

Welcome to our super tasty world.

MITSUHARU

Mitsuharu "Micha" Tsumura was born in Lima, but his origins come from Osaka, Japón.

Head chef and owner of MAIDO. He studied Culinary Arts, Food and Beverage Administration at Johnson & Wales University, USA. Upon graduation he travels to Osaka- Japan, to specialize in Japanese cuisine, he worked in restaurants such as ¨Seto Sushi¨: specialized in sushi and ¨Imo to Daikon¨ specialized in Izakaya style cuisine (Japanese tapas). He returned to Peru and worked at Sheraton Hotel as a Sous Chef and assumed the Food and Beverage Management charge until 2008. Was his passion for Peruvian cuisine with Japanese techniques, the great Nikkei cuisine that led him to create Maido (2009).

NIKKEI IS PERU

There is no such thing as Nikkei cuisine in Japan. Nikkei is Peruvian, Nikkei belongs to the world. Its stamp redefines other cuisines from all over the planet. But in Peru, Nikkei is becoming more Peruvian every day. That festive, mischievous, exuberant way—never vertical and always democratic—of savoring life’s flavor will have its effect. Nikkei cuisine may turn out to be like the marinera: we may have created our own dance, our own outfit, our own music, all based on the past, on different roots, but combined into a new and powerful language.

The book is available for purchase at the restaurant.
